I first made these tartlets when I needed a quick dessert for a get-together, and they were such a hit. The best part? They’re not only quick to prepare but also incredibly easy to assemble. Plus, they’ve got that irresistible mix of flavors and textures: crunchy, gooey, and a little bit tangy from the apples.

How to Make Mini Caramel Apple Bites

Preheat your oven to 350°F and spray a mini-muffin tin with non-stick spray. This will keep everything from sticking, making cleanup much easier. While the oven is heating up, unroll the pie crust and use a 2-inch round cookie cutter to cut out as many rounds as you can. Save the scraps and reroll them to cut out a few more. Gently press each circle into the muffin tin, making sure it fits nicely. Use a fork to prick the bottom of each shell, which will keep it from bubbling up while baking.

Sprinkle the cinnamon and sugar mixture evenly over each crust, then pop them in the oven to bake for about 8-10 minutes. The edges should turn golden and the crusts should set. Once done, take them out and let them cool before removing them from the pan.

While the crusts cool, let’s get the filling ready! In a small saucepan, melt the butter and add the diced apples and lemon juice. Cook them over medium heat for about 5-10 minutes, stirring occasionally, until the apples are tender. Stir in the sugar, caramel sauce, flour, cinnamon, and salt. Let the mixture simmer for another 3-5 minutes until it thickens and the sugar is fully melted.

Cook over medium heat, stirring, until apples are tender.
Stir in remaining ingredients and simmer until thickened.

Once the filling has cooled slightly, scoop generous spoonfuls into each cooled crust. Serve immediately for the best, warm, gooey experience!
