Preheat oven to 375°F and line a baking sheet with parchment paper.
In a small bowl, mix the cream cheese, granulated sugar, and vanilla extract until smooth.
Roll out the puff pastry on a lightly floured surface and cut it into 8 squares.
Add a spoonful of the cream cheese mixture to the center of each square, then top with cherries.
Fold the corners of the pastry toward the center, pressing lightly to seal.
Brush the pastry edges with the beaten egg for a golden finish.
Transfer to the prepared baking sheet and bake for 18–20 minutes or until golden brown.
Let cool for 5 minutes before dusting with powdered sugar.
