Chicken Parmesan

Ingredients
  

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh basil leaves chopped (optional, for garnish)
  • Cooked spaghetti or pasta of your choice optional, for serving

Instructions
 

  • Preheat the oven to 400°F.
  • Place each chicken breast between two sheets of plastic wrap and pound to an even thickness, about 1/2 inch. Season both sides with salt and pepper.
  • Prepare three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.
  • Dredge each chicken breast in the flour, shaking off any excess. Dip into the eggs, then coat with the breadcrumb mixture, pressing to adhere.
  • Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 3-4 minutes on each side, or until golden and crispy. Transfer to a baking dish.
  • Spoon marinara sauce over each piece of chicken. Top with shredded mozzarella.
  • Bake in the oven for 10-15 minutes, or until the cheese is melted and bubbly, and the chicken is fully cooked.
  • Garnish with fresh basil if desired. Serve hot, either on its own or over cooked spaghetti or pasta.
