- 2 tablespoons olive oil
- 1 ½ pounds kale stems removed, leaves coarsely chopped
- red pepper flakes crushed
- 2 garlic cloves finely sliced
- ½ cup vegetable stock or water
- salt
- pepper
- 2 tablespoons balsamic vinegar
Heat olive oil in a saucepan over medium-high heat. Add crushed red pepper flakes and let sizzle briefly.
Add garlic and cook until softened but not browned.
Increase heat to high, add vegetable stock and kale, and toss to combine.
Cover and cook for 5 minutes, then remove the cover and cook until most of the liquid evaporates.
Season with salt and pepper, drizzle with balsamic vinegar, and serve warm.
- For a milder flavor, use baby kale instead of mature kale.
