This easy sautéed kale recipe brings garlic, red pepper flakes, and balsamic vinegar together for a quick, flavorful, and healthy side dish. It’s ready in just minutes and pairs perfectly with any meal.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 ½ pounds kale stems removed, leaves coarsely chopped
  • red pepper flakes crushed
  • 2 garlic cloves finely sliced
  • ½ cup vegetable stock or water
  • salt
  • pepper
  • 2 tablespoons balsamic vinegar

Instructions
 

  • Heat olive oil in a saucepan over medium-high heat. Add crushed red pepper flakes and let sizzle briefly.
  • Add garlic and cook until softened but not browned.
  • Increase heat to high, add vegetable stock and kale, and toss to combine.
  • Cover and cook for 5 minutes, then remove the cover and cook until most of the liquid evaporates.
  • Season with salt and pepper, drizzle with balsamic vinegar, and serve warm.

Notes

  • For a milder flavor, use baby kale instead of mature kale.
  • Add diced onions for more depth of flavor.
  • For extra crunch, sprinkle with toasted almonds or pine nuts.
  • A squeeze of fresh lemon juice brightens the flavor even more.
