Magic Cookie Bars

Ingredients
  

  • ¼ cup coconut oil
  • 1 egg
  • ½ cup low carb granular sweetener
  • ½ cup unsweetened coconut flakes
  • 1 cup almond flour
  • ½ cup pecan pieces crushed
  • ½ cup sugar-free white chocolate chips
  • 1 teaspoon vanilla extract
  • 1 pinch flake salt

Instructions
 

  • Line an 8x8-inch baking dish with parchment paper, allowing the paper to hang over the edges for easy removal. Preheat the oven to 375°F.
  • In a medium bowl, combine the coconut oil, egg, and vanilla extract, stirring until smooth.
  • In a separate bowl, mix together the sweetener, almond flour, coconut flakes, and crushed pecans.
  • Pour the dry ingredients into the wet ingredients and stir until fully incorporated. Spread the mixture evenly into the prepared baking dish.
  • Place in the oven and bake for 22-25 minutes, or until the top is golden brown.
  • Remove the pan from the oven and immediately sprinkle the chocolate chips on top. Return to the oven for 2 minutes to melt the chocolate.
  • Once melted, spread the chocolate evenly across the top using a spatula. Sprinkle with flake salt while the chocolate is still soft.
  • Allow the pan to cool slightly before lifting the bars out by the parchment paper. Slice into bars and serve.
