These chocolate linzer cookies are soft, lightly chocolatey, and filled with a creamy cream cheese frosting. They look special but are easy enough for cozy baking days at home.

Cream Cheese Filling
- ½ cup unsalted butter softened
- 8 oz cream cheese softened
- 2 cups powdered sugar
- ½ teaspoon salt
- 1 teaspoon vanilla
Preheat oven to 350 degrees and line baking sheets with parchment.
Cream butter, sugar, and brown sugar until smooth.
Add egg and vanilla and mix well.
Mix in flour, espresso powder, salt, and baking powder until dough forms.
Roll dough to ¼-inch thick and cut into rounds. Cut centers from half.
Chill cookies in freezer for 10 minutes.
Bake for 9 to 10 minutes until set. Cool completely.
Beat butter and cream cheese until smooth.
Add powdered sugar, salt, and vanilla and beat until fluffy.
Spread frosting on solid cookies and top with cut-out cookies.
Dust with powdered sugar before serving.
